Tuscan-Style Slow Cooker Chicken Stew

Prep Time - 30 minutes

Ready in 6 ½ hours

Serves 8 people

Ingredients

  • 2 lbs. Boneless, skinless chicken thighs cut into 2-inch cubes

  • 14 oz. large cut mirepoix OR 1 large onion, 3-4 carrots, 3-4 celery stalks, diced

  • 2 - 15.5 oz cans Cannellini beans, drained and rinsed

  • 1 pint cherry tomatoes, halved

  • 1 - 15 oz. can No-Salt added Diced tomatoes

  • 32 oz. chicken broth

  • 1 tsp. Oregano

  • 1 tsp. Basil

  • 1 tsp. Parsley

  • 1 tsp. Rosemary

  • 1 ½ tsp. Salt

  • 1 tsp black pepper

  • 2 dry Bay leaves

Preparation

  1. Add all ingredients to slow cooker.

  2. Cover slow cooker with lid and set for 6 hours.

  3. Remove bay leaves. Add additional salt and pepper if desired.  

  4. Tips - tastes even better the second day.  Also delicious with fresh baked bread, such as sourdough.
