Tuscan-Style Slow Cooker Chicken Stew

Ready in 6 ½ hours
Serves 8 people
Ingredients
2 lbs. Boneless, skinless chicken thighs cut into 2-inch cubes
14 oz. large cut mirepoix OR 1 large onion, 3-4 carrots, 3-4 celery stalks, diced
2 - 15.5 oz cans Cannellini beans, drained and rinsed
1 pint cherry tomatoes, halved
1 - 15 oz. can No-Salt added Diced tomatoes
32 oz. chicken broth
1 tsp. Oregano
1 tsp. Basil
1 tsp. Parsley
1 tsp. Rosemary
1 ½ tsp. Salt
1 tsp black pepper
2 dry Bay leaves
Preparation
Add all ingredients to slow cooker.
Cover slow cooker with lid and set for 6 hours.
Remove bay leaves. Add additional salt and pepper if desired.
Tips - tastes even better the second day. Also delicious with fresh baked bread, such as sourdough.
